Amazing Paleo Cottage Pie Recipe

I’m really excited to share this recipe. It is SO. DARN. GOOD. Better than I expected. Especially since I was winging it. I’ve made several variations of paleo and non-paleo Shepherds Pie over the past few years but I’ve always felt that they were missing something. This one was perfect!

Ingredients

  • 1 lb grass-fed lean ground beef
  • 3 slices uncured bacon (cut into small pieces)
  • 2 carrots (diced)
  • 2 cloves garlic (minced)
  • 1/2 onion (diced)
  • salt & pepper to taste
  • 1/2 teaspoon rosemary
  • 2 generous teaspoons organic tomato paste
  • 1 tablespoon arrowroot powder mixed with 1 tablespoon chicken broth
  • 4 tablespoons chicken broth
  • 2 teaspoons homemade Worcestershire sauce

Topping Ingredients (Cauliflower mash)

  • 1 head cauliflower (broken into smaller pieces)
  • salt & pepper to taste
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon chives
  • 3-4 cups water (for boiling)

In a pot, boil the cauliflower until tender (approximately 10-15 minutes). Strain all water.

In a blender, add cauliflower and seasonings. Go easy on the salt and pepper. Blend until smooth. Taste test. If needed, add more salt and pepper. Set aside.

In a large skillet, cook bacon pieces. About 3-4 minutes. Add in diced carrots. Saute for about 2 minutes then add diced onions and minced garlic until fragrant.

In the same skillet, push the bacon and veggies to one side. Add ground beef to the other side and cook. Once it begins to brown, mix it with the veggies.

Lower the heat to a simmer. Mix in tomato paste, 4 tablespoons of chicken broth, and Worcestershire sauce. Once this is well mixed, add in the arrowroot powder and chicken broth mixture. Arrowroot serves as an all-natural thickening agent.

Preheat oven to 375.

Back to the skillet, add rosemary, salt, and pepper. Mix. Turn off heat.

In a baking dish (9x9ish), dole out the meat and veggies. Top with cauliflower mash. Bake for 20 minutes on a middle rack then move it to a top rack and back for 5-7 more minutes.

Notice this recipe doesn’t have any peas. I’m a firm believer that peas are only good for shooting through a straw at unruly dinner guests. Or if there’s some sort of apocalypse and the only thing left to eat are twinkies and peas. I would finish the twinkies first before I touched the peas. With that said, if you’re a pea-eater, peas can easily be thrown in during the carrots and onions sauting process. If you must. But why ruin a perfectly delicious Shepherds Pie?
