I'm 2 weeks into 21 days of giving up refined sugar. I've messed up once on purpose with no regrets --I was watching my two favorite girls for an evening and they were really excited about the chocolate cupcakes they had brought over. Surprisingly, that didn't make me want to jump back into my donut addiction. It's amazing what proper nutrition can do to the mindset. I don't even feel guilty about this sweet and tangy green apple crumble because the ingredients are wholesome, clean, and beneficial.
- 1 granny smith apple (cored, de-seeded, & thinly sliced)
- 1 teaspoon lemon juice
- 1/2 teaspoon ground cinnamon, divided (so that's two 1/4 teaspoons)
- 3/4 cup almond meal
- 1 tablespoon melted ghee / clarified butter
- 1 tablespoon pure honey
- pinch of salt
- (optional) 1 tablespoon almond milk (to cut the tartness of the apple)
Preheat oven to 350.
Toss the apple slices with lemon juice and 1/4 teaspoon of cinnamon.
In baking dish greased with ghee (I used 3 small ramekins for smaller portions), spread out the apple slices.
In a separate bowl, mix almond meal, ghee, salt, cinnamon, honey, and optional almond milk. Evenly spread this mixture over the apples.
Cover with tinfoil and bake for 20 minutes. Bake uncovered for an additional 20 minutes. Let cool for 7 minutes before serving.
