Bacon, eggs, avocado... you know this is going to be good!
- 1 large avocado, halved & seed removed
- 2 eggs
- salt & pepper to taste
- 1/2 slice of bacon (chopped)
- 2 pinches of chives (optional)
- 2 shakes of garlic powder (optional
Preheat oven to 425.
Scoop out some of the avocado in the halves and set aside what is scooped out. You can use that to spread over paleo almond bread toast. The eggs need to be able to fit into the avocado holes.
CAREFULLY crack the eggs into each avocado half. Place the avocado halves into a baking pan, leaning against the sides of the pan to prevent it from tipping over.
Top eggs with chopped bacon. (Optional step) Season eggs.
Bake for 15 minutes then broil for 1 minute. Since I like my egg yolks hard, I baked mine for 18 minutes, broiled for 1 minute.
