Good news for lazy cooks (like myself): this balsamic vinaigrette also works great as a marinade. Even more good news for my lazy self, I had enough leftovers from last night's Paleo Lemon & Rosemary Salmon which meant I didn't have to cook lunch & I could toss it into a salad. Hurrah for shortcuts!
- 1/2 teaspoon minced garlic
- 1 cup balsamic vinegar
- 1 cup EVOO
- 1 teaspoon dried oregano
- 2 teaspoons organic Dijon mustard
- salt & pepper to taste
Add all ingredients into a mason jar (or something with an air-tight cover). Shake well. Done.
