Food makes me excited. How excited? So excited that I planned a trip to Trader Joe's as a significant event of the week because I recently learned THEY SELL PRE-PACKAGED RICED CAULIFLOWER! I told myself not to get my hopes up. Maybe it would be out of stock, out of season, or that instead of cauliflower being listed on the ingredients, CARDBOARD is listed instead. Along with Xanthan Gum, Butylated Hydroxyanisole, and 5 different types of artifical sweetners.
My exciting trip to Trader Joe's turned out to be a success. There was a plethora of Riced Cauliflower and the ingredients listed on the back? Cauliflower and salt. That it's. No added preservatives with weird names. So I stocked up and the first thing I made was Cauliflower Fried "Rice", which is rice without the actual rice.
I cut rice out of my diet years ago (limiting my intake to special occassions like when I fly home twice a year to visit mom and dad), and replaced it with quinoa. While quinoa is compliant with some Paleo diets in moderation, it is NOT Whole30 compliant. This recipe, on the other hand, totally is.
- 1 package Trader Joe's Riced cauliflower
- 1 carrot (minced)
- 1/2 small yellow onion (minced)
- 2 cloves garlic (minced)
- 2 scallions, chopped
- 1 tablespoon coconut aminos
- 2 teaspoons sesame oil
- 1 egg (whisked)
- 2 teaspoons ginger powder
- salt & pepper to taste
Cook the riced cauliflower according to the package in sesame oil in a large pan / wok. Half way through cooking, added the minced carrot, onions, & garlic.
Once the onion is translucent, add coconut aminos, ginger powder, salt & pepper. Mix well.
Push the cauliflower mixture aside in the pan. Add the egg to the space in the pan. Let the egg cook mostly through then mix it into the cauliflower.
Remove from heat and garnish with scallions.
This goes great as a side dish to Paleo Korean Beef Bulgogi.
