I've never had a recipe fail so badly as when I tried to make "the perfect" paleo snickerdoodle cookies; the recipe title even said "Secrets to Make the Perfect Paleo Cookie (and a Chewy Snickerdoodle Recipe!)". I definitely missed the secret because this was the result: https://twitter.com/herexpeditions/status/613866874900647936. Definitely Pinterest Fail worthy.
After such a massive failure, I was a little wary of grabbing recipes from Pinterest. So I turned to the good ol' reliable PaleOMG for a no-fail cookie recipe with very minor tweaks. It was a win! Soft & Chewy Double Chocolate Chip Cookies turned out perfect!
Recipe adapted from PaleOMG
- 1 cup Barney Butter Smooth Almond Butter (almond butter must be THICK)
- 1 cup coconut sugar
- 2 tablespoons raw honey
- 1 egg
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- pinch of salt
- 1/2 cup Enjoy Life Mini Chocolate Chips
Preheat oven to 350. In a large bowl, mix almond butter with coconut sugar --this may take some arm muscle as the almond butter used should be really thick. In fact, you can probably skip working out your arms after this recipe. Do this on a leg day.
In a separate small bowl, whisk the egg, raw honey, salt, and baking soda together. Add to almond butter and mix well before mixing in the chocolate chips.
Scoop out 2-3 tablespoons onto a baking sheet. I always place a Silpat mat on top of my baking sheets. They are amazing!
Slightly press down on the balls with your hand or a fork --be careful when pressing down. You don't need to add a lot of pressure as the cookie balls will crumble. The honey should help a little with keeping them together.
Bake for 10-12 minutes. Let them cool before removing them from the baking sheet.
These are, without a doubt, the best paleo cookies I've ever had!
