Paleo Almond Bread
I'm not a breakfast person but when I'm in the mood for it, one of my favorite things to put together is avocado spread on bread. But bread is not Paleo. Organic grocery stores may sell gluten-free bread but check out the ingredients: 9 times out of 10 there are modified starches and gums on that list. Just because it says gluten-free doesn't mean it's good for you. Luckily, this Paleo-compliant recipe for almond bread is really easy to make so I don't have to miss out on avocado spread on bread.
Ingredients
- 2 cups almond meal
- 2 tablespoons coconut flour
- 1/4 cup ground golden flax seeds / flaxmeal
- 1 tablespoon melted ghee / clarified butter
- 1 tablespoon raw honey
- 1 tablespoon apple cider vinegar
- 1/8 teaspoon salt
- 1/2 teaspoon baking soda
- 5 eggs (whisked)
Preheat oven to 350.
In a medium bowl, sift dry ingredients.
Mix in eggs, then ghee, honey, and apple cider vinegar. I used a hand mixer to make sure everything was mixed well.
In a VERY well greased bread loaf pan (use ghee), pour batter.
Bake for 35 minutes. Let the pan cool for 2 minutes before running a butter knife along the edges of the almond bread to make sure it is not sticking to the pan. Flip pan over onto a wire rack and let cool for an hour.
