Paleo Coconut Chocolate Chip Cookies
I have slightly anti-social tendencies... Surprising? The only social butterfly I've ever been is the online kind. I have a tendency to seemingly drop off the face of the earth from my friends. I ♥ my small, close circle of pals but I entertain myself quite nicely on my own. Text me and some times it takes days to get a response and when I finally respond, it's with 20 text messages. You see, in my head, I had already responded to the message... I just forget to follow through. Oops.
This is how I try to make it up to pals for dropping off the grid: with paleo coconut chocolate chip cookies.
Recipe
Ingredients
- 2 cups almond meal
- 1/4 teaspoon sea salt
- 1/4 teaspoon baking soda
- 6 tablespoons melted coconut oil
- 1/2 cup raw honey
- 1/2 teaspoon pure almond extract
- 1/2 cup chocolate chips (Enjoy Life chips are glutenfree, dairyfree, soyfree and use organic ingredients)
- 1/2 cup finely shredded unsweetened coconut
Preheat oven to 350. Mix dry ingredients. In separate bowl mix wet ingredients. Combine & mix well. I used a small ice cream scooper to dole these out on a baking sheet & flattened the balls with a spoon. Bake for 11 minutes.
Healthy chocolate cookies that won't break the scale! Unless, of course, 50 cookies a day are consumed and exercise consists only of lifting food to mouth. Which is allowed. We're all adults here.
